Almond Crusted Chicken Breast with Lemon Butter Zoodles

Almond Crusted Chicken Breast
Ingredients
- 2 chicken breast, filleted
- 1 cup almond meal
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 2 tablespoons butter
Directions
- Fillet two chicken breast by cutting them in half lengthwise so you have four thin chicken pieces.
- In a baking pan mix the almond meal, garlic powder, salt, pepper, oregano and thyme.
- Dry the chicken breasts and cover with the almond meal mixture on both sides.
- Heat butter in a large cast iron skillet until melted. Cook the chicken breast on the cast iron for about 4-5 minutes on each side.
- Serve with Lemon Butter Zoodles (recipe below)
Lemon Butter Zoodles
Ingredients
- 3 medium Zucchinis, spiralized
- 1 tablespoon Butter
- 2 teaspoons Garlic Powder
- ½ teaspoon Salt
- ½ teaspoon Pepper
- Juice of one Lemon
- Zet of half the lemon
- ¼ cup Fresh Parsley, chopped
Directions
- Spiralize zucchini and set aside
- Heat butter in the skillet until melted on medium, add in the zoodles and stir. Sprinkle with salt, pepper and garlic powder. Cover and cook on low/medium for about 6 minutes.
- Remove from heat and add lemon juice, lemon zest and parsley to the zoodles.
- Plate the zoodles and then serve with the almond crusted chicken.
