Almond Crusted Chicken Breast with Lemon Butter Zoodles

Almond Crusted Chicken Breast

Ingredients

  • 2 chicken breast, filleted
  • 1 cup almond meal
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½  teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 2 tablespoons butter

Directions

  1. Fillet two chicken breast by cutting them in half lengthwise so you have four thin chicken pieces.
  2. In a baking pan mix the almond meal, garlic powder, salt, pepper, oregano and thyme.
  3. Dry the chicken breasts and cover with the almond meal mixture on both sides.
  4. Heat butter in a large cast iron skillet until melted. Cook the chicken breast on the cast iron for about 4-5 minutes on each side.
  5. Serve with Lemon Butter Zoodles (recipe below)

Lemon Butter Zoodles

Ingredients

  • 3 medium Zucchinis, spiralized
  • 1 tablespoon Butter
  • 2 teaspoons Garlic Powder
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • Juice of one Lemon
  • Zet of half the lemon
  • ¼ cup Fresh Parsley, chopped

Directions

  1. Spiralize zucchini and set aside
  2. Heat butter in the skillet until melted on medium, add in the zoodles and stir. Sprinkle with salt, pepper and garlic powder. Cover and cook on low/medium for about 6 minutes.
  3. Remove from heat and add lemon juice, lemon zest and parsley to the zoodles.
  4. Plate the zoodles and then serve with the almond crusted chicken.
