Chicken Cacciatore

INGREDIENTS:
- 2 chicken breasts
- kosher salt and fresh pepper to taste
- olive oil
- 1 can (14 oz) crushed tomatoes
- 1/2 cup diced onion
- One 8 ounce container sliced mushrooms
- 2 cloves garlic, minced
- ⅛ cup red wine vinegar
- 1/2 teaspoon dried oregano
- 2 tablespoons chopped basil for garnish
DIRECTIONS:
- Season chicken with salt and pepper on both side.
- Press saute on the Instant Pot, lightly spray with oil and brown chicken on both sides a few minutes. Remove and set aside.
- Spray Instant Pot with a little more oil and add onions and mushrooms. Sauté until soften and golden, 5-7 minutes. Then add in garlic and saute 1 minute.
- Pour tomatoes over the vegetables, add oregano, bay leaf, salt and pepper, give it a quick stir. Add the Chicken bake to the Instant Pot and mix all of the ingredients.
- Cover and cook on high pressure 25 minutes; natural release.
- Garnish with basil and Serve over pasta, zoodles or whatever you wish!
