Instant Pot Chicken Cacciatore with Zoodles

Chicken Cacciatore

INGREDIENTS:

  • 2 chicken breasts
  • kosher salt and fresh pepper to taste
  • olive oil
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup diced onion
  • One 8 ounce container sliced mushrooms
  • 2 cloves garlic, minced
  • ⅛ cup red wine vinegar
  • 1/2 teaspoon dried oregano
  • 2 tablespoons chopped basil for garnish

DIRECTIONS:

  1. Season chicken with salt and pepper on both side.
  2. Press saute on the Instant Pot, lightly spray with oil and brown chicken on both sides a few minutes. Remove and set aside.
  3. Spray Instant Pot with a little more oil and add onions and mushrooms. Sauté until soften and golden, 5-7 minutes. Then add in garlic and saute 1 minute.
  4. Pour tomatoes over the vegetables, add oregano, bay leaf, salt and pepper, give it a quick stir. Add the Chicken bake to the Instant Pot and mix all of the ingredients. 
  5. Cover and cook on high pressure 25 minutes; natural release.
  6. Garnish with basil and Serve over pasta, zoodles or whatever you wish!
