Baked Chicken Breast, Curried Cauliflower Rice and Roasted Broccoli

Curried Cauliflower Rice
Ingredients
- 1 head cauliflower
- ½ small onion
- 2 teaspoon coconut oil
- 1 tablespoon curry powder
- 2 teaspoon garlic powder
- 1 teaspoon paprika
- salt and pepper to taste
- ½ cup raisins
- ½ cup chopped roasted almonds
Directions
- Cut cauliflower florets into medium size pieces and pulse blend the cauliflower in a blender. Do in 4 batches so the pieces do not get too small. Pulse until the cauliflower is the size of rice
- In a large pot heat coconut oil on medium heat until melted and then add onion on medium heat. Cook for about 5 minutes until the onion is soft and a slightly browned.
- Lower the heat to low and add the curry powder, garlic powder, paprika, salt and pepper and mix.
- Add the cauliflower and raisins and mix all ingredients. Cover the pot and cook for about 8-10 minutes on low stirring occasionally.
- Once the cauliflower is soft but still has a little bite, turn off the heat and add the almonds.
- Serve with chicken, fish or a vegetable dish
Seared and Baked Chicken Breast
- 2 chicken breast
- Grill Mates Montreal Chicken seasoning
- 1 tablespoon Canola oil
Directions
- Preheat the oven to 350 degrees
- With a meat pounder, pound the chicken so it is evenly 2 inches thick. Season the chicken breast on both sides. I like to use the Grill Mates Montreal seasoning from Costco.
- Heat a cast iron skillet on high on the stove until it sizzles when you drop a little water on it.
- Add oil and let sit for 30 seconds then sear the chicken about 1 1/2 -2 minutes on each side.
- Once each side has been seared place the cast iron skillet in the oven and depending on the thickness of the chicken cook about 10 minutes.
Roasted Broccoli
Ingredients
- 2 heads of broccoli
- 1 clove garlic
- 1 1/2 teaspoon red pepper flakes
- 2 teaspoon oregano
- 1 1/2 teaspoon salt
- 1 teaspoon pepper
- olive oil
Directions
- Use the preheated oven from the chicken at 350
- Cut the heads of broccoli into about 1 1/2 inch pieces and place on a 13 x 9 baking sheet
- Drizzle olive oil over the brocoli and add the garlic, red pepper flakes, oregano and salt and pepper
- Mix all of the ingredients and then bake in the oven for about 18 minutes or until the broccoli is brown
