Baked Chicken Breast, Curried Cauliflower Rice and Roasted Broccoli

Curried Cauliflower Rice

Ingredients

  • 1 head cauliflower
  • ½ small onion
  • 2 teaspoon coconut oil
  • 1 tablespoon curry powder
  • 2 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt and pepper to taste
  • ½ cup raisins
  • ½ cup chopped roasted almonds

Directions

  1. Cut cauliflower florets into medium size pieces and pulse blend the cauliflower in a blender. Do in 4 batches so the pieces do not get too small. Pulse until the cauliflower is the size of rice
  2. In a large pot heat coconut oil on medium heat until melted and then add onion on medium heat. Cook for about 5 minutes until the onion is soft and a slightly browned.
  3. Lower the heat to low and add the curry powder,  garlic powder, paprika, salt and pepper and mix.
  4. Add the cauliflower and raisins and mix all ingredients. Cover the pot and cook for about 8-10 minutes on low stirring occasionally.
  5. Once the cauliflower is soft but still has a little bite, turn off the heat and add the almonds.
  6. Serve with chicken, fish or a vegetable dish

Seared and Baked Chicken Breast

  • 2 chicken breast
  • Grill Mates Montreal Chicken seasoning
  • 1 tablespoon Canola oil

Directions

  1. Preheat the oven to 350 degrees
  2. With a meat pounder, pound the chicken so it is evenly 2 inches thick. Season the chicken breast on both sides. I like to use the Grill Mates Montreal seasoning from Costco.
  3. Heat a cast iron skillet on high on the stove until it sizzles when you drop a little water on it.
  4. Add oil and let sit for 30 seconds then sear the chicken about 1 1/2 -2 minutes on each side.
  5. Once each side has been seared place the cast iron skillet in the oven and depending on the thickness of the chicken cook about 10 minutes.

Roasted Broccoli

Ingredients

  • 2 heads of broccoli
  • 1 clove garlic
  • 1 1/2 teaspoon red pepper flakes
  • 2 teaspoon oregano
  • 1 1/2 teaspoon salt
  • 1 teaspoon pepper
  • olive oil

Directions

  1. Use the preheated oven from the chicken at 350
  2. Cut the heads of broccoli into about 1 1/2 inch pieces and place on a 13 x 9 baking sheet
  3. Drizzle olive oil over the brocoli and add the garlic, red pepper flakes, oregano and salt and pepper
  4. Mix all of the ingredients and then bake in the oven for about 18 minutes or until the broccoli is brown
