Fresh Corn Salad, Instant Pot Chicken and Broccoli
Fresh Corn Salad
Salad Ingredients
- 2 ears of corn
- 1 cup cherry tomatoes, halved
- ¼ cup cilantro, chopped
- 1 jalapeno, diced
- 1 avocado, diced
- 1 head of romaine
Dressing Ingredients
- Juice of 1 lime
- 1 tablespoon rice wine vinegar
- 1 tablespoon honey
- 1 tablespoon water
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon chili powder
- ½ cup olive oil
Directions
- Remove the husk from the ears of corn and break in half. Place ear of corn so it stands up and slice all kernels from the center stalk and place in a medium bowl. - Mix the corn with the halved cherry tomatoes, cilantro, jalapeno and avocado.
- Put all of the dressing ingredients into a bowl and whisk together. Pour over the corn mixture until combined.
- Chop the head of romaine and place in a large bowl. Pour the corn mixture over the romaine and mix to combine ingredients.

Instant Pot Spiced Chicken Breast
Ingredients
- 3 boneless skinless chicken breasts
- 1 teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon olive oil
Directions
- Turn Instant pot on the saute mode on medium heat and heat the oil
- Mix all seasonings together in a small bowl
- Sprinkle the chicken breasts with the seasoning mixture on both sides.
- Brown the chicken breasts on both sides, about 3 minutes each side
- Cover the Instant Pot and lock the lid. Cook on the pressure cooker setting for 6 minutes. Let the pressure cooker do a natural release and then serve with the Fresh Corn Salad and Broccoli.
Pan Roasted Broccoli
Ingredients
- 3 heads of broccoli, chopped into bite sized pieces
- ¼ onion diced
- 2 tsp onion powder
- ½ tsp red pepper flakes
- Salt and pepper
- ½ tbs olive oil
Directions
- Chop the broccoli into large bite sized pieces and dice the onion
- Heat oil in a large saucepan until shimmering and then add the onion. Cook for about 5 minutes or until lightly browned
- Add the broccoli to the saucepan, stir and cover. Let cook for about 2 minutes.
- Add the onion powder, red pepper flakes, salt and pepper. Mix and cover for another 5-7 minutes
- Broccoli is done when it has softened but still has a bit of crunch.
