Instant Pot Whole Chicken, Roasted Red Potatoes and Broccoli

Instant Pot Chicken
Ingredients
- 1 Whole 4 lb Chicken
- 2 teaspoon oregano
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 onion
- 1 red bell pepper
- 10 chopped baby carrots
- 1/2 cup chicken broth
- 3 spring onions
- olive oil
Directions
- In a small bowl, combine paprika, oregano, salt, and pepper. Rub seasoning over outside of bird. Remember to remove the giblets from inside the chicken.
- Turn Instant Pot to the Saute function on high. Heat olive oil in to shimmering and add whole chicken, breast side down and cook 6-7 minutes.
- Flip the chicken and cook 5 minutes then remove.
- Add onion, bell pepper and baby carrots and saute for about 5-7 minutes or until browned. Place the steamer rack into the Instant Pot and then put the whole chicken on top.
- Add in the chicken broth into the Instant Pot and put the lid on.
- Lock pressure cooker lid and set for 25 minutes on high.
- Let the pressure cooker release naturally.
- Remove from pressure cooker and let stand for 5 minutes before carving. Top with the vegetables from the bottom of the pressure cooker. Garnish with sliced green onions.
Roasted Red Potatoes
Ingredients
- 10 red potatoes, sliced
- 2 teaspoon rosemary
- 1/2 teaspoon red pepper flakes
- 1/2 onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 tablespoon olive oil
Directions
- Heat oven to 375 degrees ferenheit
- Mix sliced potatoes with olive oil, onion and all seasonings.
- Place on baking sheet and bake for about 30 mintues
Roasted Broccoli
Ingredients
- 2 heads broccoli, cut into florets
- 2 cloves minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon olive oil
Directions
- Use the preheated oven to 375 degrees ferenheit
- Mix all ingredients with Brocolli
- Spread on a baking sheet and bake for about 20 minutes
