Spiralized Parsnips with Shrimp, Tomatoes, Basil and Garlic

Ingredients
- 4 Parsnips, spiralized
- 2 tablespoons olive oil
- 2 cloves garlic
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon red pepper flakes
- 1 tablespoon balsamic vinegar
- 1 cup halved cherry tomatoes
- 25 shrimp, peeled and deveined
- ¾ cup basil, julienned
Directions
- Spiralize the parsnips and set aside, I use the kitchenaid attachment to spiralize my vegetables.
- Add 1 tablespoon olive oil to a large skillet over medium heat. Add shrimp and cook until opaque and pink, 2-3 minutes. Remove shrimp and place on a plate and cover.
- Add the garlic and sauté 1 minute. Add remaining olive oil, parsnip pasta, salt, black pepper and red pepper and cook for 5-7 minutes.
- Add the shrimp and balsamic vinegar and cook for another 2 minutes.
- Remove from heat and mix in the Fresh Basil and enjoy.
