Spiralized Parsnips with Shrimp, Tomatoes, Basil and Garlic

Ingredients

  • 4 Parsnips, spiralized
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon red pepper flakes
  • 1 tablespoon balsamic vinegar
  • 1 cup halved cherry tomatoes
  • 25 shrimp, peeled and deveined
  • ¾ cup basil, julienned

Directions

  1. Spiralize the parsnips and set aside, I use the kitchenaid attachment to spiralize my vegetables.
  2. Add 1 tablespoon olive oil to a large skillet over medium heat. Add shrimp and cook until opaque and pink, 2-3 minutes. Remove shrimp and place on a plate and cover.
  3. Add the garlic and sauté 1 minute. Add remaining olive oil, parsnip pasta, salt, black pepper and red pepper and cook for 5-7 minutes.
  4. Add the shrimp and balsamic vinegar and cook for another 2 minutes.
  5. Remove from heat and mix in the Fresh Basil and enjoy.
