(Chicken, Broccoli, Quinoa, Carrots, Roasted Beet Hummus)

Ingredients for Salad

  • Arugula
  • Cooked Chicken Breast
  • Steamed Broccoli
  • Shredded Carrots
  • Cooked Quinoa
  • Chopped Walnuts
  • Roasted Beet Hummus

Directions

  1. Mix all ingredients accept for the hummus together. Top with the hummus and enjoy!

Roasted Beet Hummus

Ingredients

  • 2 small roasted beets, I used the pre-roasted ones from Trader Joes
  • 1 15 oz. can cooked chickpeas, drained
  • 1 large lemon zest and juice
  • 1 clove garlic
  • 2 large tablespoons tahini
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Directions

  1. Put all ingredients into a blender or food processor and blend until smooth
