Superfood Salad

(Chicken, Broccoli, Quinoa, Carrots, Roasted Beet Hummus)
Ingredients for Salad
- Arugula
- Cooked Chicken Breast
- Steamed Broccoli
- Shredded Carrots
- Cooked Quinoa
- Chopped Walnuts
- Roasted Beet Hummus
Directions
- Mix all ingredients accept for the hummus together. Top with the hummus and enjoy!
Roasted Beet Hummus

Ingredients
- 2 small roasted beets, I used the pre-roasted ones from Trader Joes
- 1 15 oz. can cooked chickpeas, drained
- 1 large lemon zest and juice
- 1 clove garlic
- 2 large tablespoons tahini
- 1/4 cup extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
Directions
- Put all ingredients into a blender or food processor and blend until smooth
