Spicy Zucchini Black Bean Burgers with Baked Sweet Potato Fries

Ingredients

  • 1 15 oz can black beans, drained and rinsed
  • 1 cup grated zucchini (about 1 medium zucchini), squeezed of excess liquid
  • ½  cup cooked quinoa
  • ¼ cup rolled oats
  • 1 egg
  • 1 garlic clove, minced
  • ½  T chili powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cumin
  • ½ teaspoon salt
  • ¼ teaspoons pepper

Directions

  1. Take 1 cup of black beans and add to a large bowl. Mash with a potato masher or back of a fork until it has formed a sticky paste.
  2. Add in remainder of black beans, grated zucchini, quinoa, rolled oats, egg, garlic and spices and use hands to mix together.
  3. Form into 4 patties. Do not flatten too much. Should be thick.
  4. Refrigerate for about 1-2 hours
  5. Heat 1 tablespoon olive oil in a large skillet. Add in the 4 patties and cook for about 7 minutes on each side.
  6. Remove from heat and serve with smashed avocado, Sauteed onions, baked sweet potato fries and salad.

Baked Sweet Potato Fries

Ingredients

  • 2 Large Sweet Potatoes, cut into wedges
  • 2 Tablespoons Olive Oil
  • ½ Teaspoon Salt
  • ½ Teaspoon Pepper
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Smoked Paprika

Directions

  1. Preheat oven to 400 degrees F
  2. Place sweet potatoes and olive oil in large bowl, toss lightly. Sprinkle with salt, pepper, garlic powder and smoked paprika.
  3. Arrange potatoes in a single layer on lightly oiled baking sheet, being sure not to overcrowd.
  4. Bake until tender and golden brown, turning occasionally. Cooking time is 18 to 24 minutes. Cool 5 minutes before serving.IMG_20181023_183238.jpg
