Spicy Zucchini Black Bean Burgers with Baked Sweet Potato Fries

Ingredients
- 1 15 oz can black beans, drained and rinsed
- 1 cup grated zucchini (about 1 medium zucchini), squeezed of excess liquid
- ½ cup cooked quinoa
- ¼ cup rolled oats
- 1 egg
- 1 garlic clove, minced
- ½ T chili powder
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin
- ½ teaspoon salt
- ¼ teaspoons pepper
Directions
- Take 1 cup of black beans and add to a large bowl. Mash with a potato masher or back of a fork until it has formed a sticky paste.
- Add in remainder of black beans, grated zucchini, quinoa, rolled oats, egg, garlic and spices and use hands to mix together.
- Form into 4 patties. Do not flatten too much. Should be thick.
- Refrigerate for about 1-2 hours
- Heat 1 tablespoon olive oil in a large skillet. Add in the 4 patties and cook for about 7 minutes on each side.
- Remove from heat and serve with smashed avocado, Sauteed onions, baked sweet potato fries and salad.
Baked Sweet Potato Fries
Ingredients
- 2 Large Sweet Potatoes, cut into wedges
- 2 Tablespoons Olive Oil
- ½ Teaspoon Salt
- ½ Teaspoon Pepper
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Smoked Paprika
Directions
- Preheat oven to 400 degrees F
- Place sweet potatoes and olive oil in large bowl, toss lightly. Sprinkle with salt, pepper, garlic powder and smoked paprika.
- Arrange potatoes in a single layer on lightly oiled baking sheet, being sure not to overcrowd.
- Bake until tender and golden brown, turning occasionally. Cooking time is 18 to 24 minutes. Cool 5 minutes before serving.
