Spiralized Sweet Potato, Black Bean and Kale Skillet

Ingredients

  • 2 large sweet potatoes, spiralized
  • 5 Scallions, chopped
  • 3-4 cups chopped kale
  • 14.5oz can black beans
  • 14.5 oz can diced tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • salt and pepper to taste
  • 1 tablespoon olive oil

Directions

  1. Heat the oil in a 12” large oven-safe skillet over medium-high heat. Once oil is shimmering, add the sweet potato noodles and all seasonings. Cook until wilted, about 10 minutes.  
  2. Add the kale, black beans and tomatoes. Toss until kale is slightly wilted, cover and cook about 6 minutes.
  3. Remove the skillet from heat and  serve.
