Spiralized Sweet Potato, Black Bean and Kale Skillet

Ingredients
- 2 large sweet potatoes, spiralized
- 5 Scallions, chopped
- 3-4 cups chopped kale
- 14.5oz can black beans
- 14.5 oz can diced tomatoes
- 2 teaspoons chili powder
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon cayenne pepper
- salt and pepper to taste
- 1 tablespoon olive oil
Directions
- Heat the oil in a 12” large oven-safe skillet over medium-high heat. Once oil is shimmering, add the sweet potato noodles and all seasonings. Cook until wilted, about 10 minutes.
- Add the kale, black beans and tomatoes. Toss until kale is slightly wilted, cover and cook about 6 minutes.
- Remove the skillet from heat and serve.
