Banana Bread

Banana Bread

  • 1 cup butter
  • ⅔ cup white sugar
  • ⅓  cup brown sugar
  • 6 ripe small bananas, mashed
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 ½ cups all purpose flour
  • ½ cup instant oats
  • 1 teaspoon salt
  • ½ teaspoon cinnamon

Directions

  1. Preheat oven to 350º
  2. Cream together butter and sugars.
  3. Add eggs, vanilla and mashed bananas and combine well.
  4. Mix together flour, oats, baking soda, cinnamon and salt. Add to creamed mixture.
  5. Mix just until combined. Do not overmix.
  6. Pour into greased and floured loaf pan. I used one that is 9 x 5 and one that was 4 x 3. Depending on the thickness you like you can use a larger or smaller pan and then change the cook time. 
  7. Bake at 350º for 55 minutes. Bake until a toothpick comes out clean from the bread. 
  8. Keeps well, refrigerated.
