Banana Bread
- 1 cup butter
- ⅔ cup white sugar
- ⅓ cup brown sugar
- 6 ripe small bananas, mashed
- 2 eggs
- 1 teaspoon vanilla
- 2 ½ cups all purpose flour
- ½ cup instant oats
- 1 teaspoon salt
- ½ teaspoon cinnamon
Directions
- Preheat oven to 350º
- Cream together butter and sugars.
- Add eggs, vanilla and mashed bananas and combine well.
- Mix together flour, oats, baking soda, cinnamon and salt. Add to creamed mixture.
- Mix just until combined. Do not overmix.
- Pour into greased and floured loaf pan. I used one that is 9 x 5 and one that was 4 x 3. Depending on the thickness you like you can use a larger or smaller pan and then change the cook time.
- Bake at 350º for 55 minutes. Bake until a toothpick comes out clean from the bread.
- Keeps well, refrigerated.
