Homemade Granola Bars

Homemade Granola Bars

You can add any mix of dried fruit, nuts or chocolate chips to these granola bars.

Ingredients

  • 3 cups rolled oats
  • 1 cup unsweetened shredded coconut
  • ⅓ cup butter
  • ⅓ cup honey
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 ½ cup dried fruit or nuts (I used diced dried apricots and raisins)

Directions

  1. Preheat oven to 350 degrees
  2. Mix oats and shredded coconut together on a baking sheet and bake for 10 minutes, until lightly browned. Remove from oven and set aside.
  3. Place butter, honey, brown sugar, vanilla extract and salt in a small saucepan and bring to a boil. Cook for one minute and then reduce to a simmer. Pour butter/ honey mixture over oats and coconut.
  4. Add apricots and raisins (or any granola bar mixing you like)
  5. Pour granola mixture onto a buttered baking sheet and with oiled hands press down into a rectangle. It wont cover the full baking sheet.
  6. Cover and refrigerate for at least 2-3 hours before cutting into squares.
