Raw Brownie Bites (Liz Bites)
I created this recipe when Michael and I were doing the Whole 30 program last year since all sweets are not allowed. This was so we could have a little dessert during the program (which is cheating). This is technically not Whole 30 compliant, even though all of the ingredients are allowed on the Whole 30 program. We were really craving a little something sweet so this “brownie” did the trick and now it is a recipe I keep bringing back so Michael started calling them Liz Bites. It is not the prettiest dessert but it is really tasty and it helps satisfy your sweet tooth.
Raw Brownie Bites (Vegan, Paleo)
Ingredients:
- 2 cups raw walnut halves
- ½ cup cocoa powder
- 1 teaspoon vanilla extract (alcohol free, if you prefer)
- ½ teaspoon fine sea salt
- 1 ½ cup soft dates, pitted
- ¼ cup coconut flakes
- 1 tablespoon coconut oil
- 1 tablespoon water
Directions:
- In a blender, grind the walnuts into a fine meal.
- Add in the rest of the ingredients, and process again until a sticky, uniform “dough” is formed.
- Place a silicon baking sheet in the bottom of a 13 x 9 inch baking dish and scoop the “batter” the dish and press down into ½ inch thick layer. It will not spread out into the whole pan.
- Put the pan in the freezer for at least one hour. Remove and cut into squares. Store in the freezer.
